PROCESSING AND DISTILLATION:
The Cembra Valley used to be cultivated almost exclusively with Schiava grape variety. It is an excellent and
only apparently simple variety. The marcs arrive directly from the small wineries of Cembra valley lightly
pressed. They require a careful distillation through the traditional bain-marie still to preserve all their
fragrance.
Before being bottled, the Schiava Grappa ages for at least one year in steel tanks.
PROPERTIES:
Grappa of Schiava often leaves amazed by the delicacy of its aroma, slightly floral, evolving towards hints of
walnut. The taste is elegant, with complex sensations and excellent persistence.
Grappa of Schiava represents the synthesis of all our efforts to improve the quality of our Grappa.
TASTING:
We recommend to taste it fresh, at around 16 °C. Store it in a cool dark place.
