PROCESSING AND DISTILLATION:
In Trentino the quince fruit was put into wardrobes to give a fresh fruity scent to clean clothes. From this
tradition the distillation of its brandy begins.
In fall, after the harvest, the apples are stored for a short time in cold cellars, usually until December. A
careful fermentation and distillation in discontinuous bain-marie still preserve its delicate and fresh note.
The brandy ages for over a year in steel tanks before being bottled.
PROPERTIES:
Undoubtedly brilliant and crystal clear, the notes of ripe quince together with a complex, pleasant and
unmistakably precise scent. The flavour is clean, with an alcoholic note and an extremely rich, precise,
balanced aftertaste.
TASTING:
We recommend to taste it fresh, at around 16 °C. Store it in a cool dark place.
